Chocolate Chip Cherry Coconut Scones

I know, I know- posting 2 days in a row- I haven't been able to do this in ages. I am between semesters currently and actually have a  Saturday where we have NO PLANS- so I figured, why not? And I actually BAKED this morning too!! Another past time that has taken the back burner while in grad school:(

So, I wanted to share these yummy scones with you all!  Check them out- I just have a  few pics- not a blow-by-blow pictorial- the recipe is at the end.  These scones are based off of an Ina Gartin recipe I found a few years back.

Chocolate Cherry Coconut Scones

2 cups flour (I used a mixture of whole wheat, unbleached white, and brown rice)
1 Tbls. baking powder
1 tsp. salt
1/4 cup sugar
3/4 cup cold cubed butter
2 eggs (slightly beaten)
1/4 cup skim milk
1/4 cup light sour cream (or greek yogurt)
1 cup chocolate chips
1/2 cup dried tart cherries (chopped)
1/2 cup unsweetened  shredded coconut

Combine flour, powder, sugar and salt. In the bowl of an electric mixer add in butter and mix until the butter is combined with flour mixture in pea-sized chunks. Add chocolate and cherries- stir to combine. Combine sour cream, milk and eggs in separate bowl- pour into dry mixture. Stir just to combine. Roll out dough onto floured surface- 1" thick (I should have made it a little thicker). Cut into desired shapes (I did hearts:) Place on parchment lined baking sheet. Bake at 400 degrees, 15-18 mins until desired color is achieved:) 
(I made a quick icing with powdered sugar, a little softened butter, vanilla and skim milk)

  1. Oh, those look yummy! We usually always make everything from scratch, but last night we opted for the Easy Button & bought some chocolate chip cookie dough stuff. I think I need something real to erase the memory.
